The Ockfener Bockstein extends over sixty-three hectares of a steep south-west-facing slope, in the Saar. Its terroir brings together gray Devoinian slate, quartzitic sandstone and clay, giving rise to expressive wines accessible from their youth but capable of aging for many years in the cellar. Markus Molitor cultivates his Rieslings with extreme care, particularly during the manual harvest, where the berries are chosen one by one according to their degree of maturity. Sorting continues in the cellar, then the berries are crushed and macerated for a few hours before pressing. The juices are then funneled into barrels for fermentation initiated spontaneously by native yeasts, followed by long aging on the lees.
Markus Molitor indicates the degree of sweetness of his wines using the color of the capsule. Here, green, for semi-dry, and a pure and aromatic wine, with a floral and exotic fruit bouquet. The palate shows a remarkable balance, between smoothness and energizing acidity, a salty touch bringing even more freshness. A wine full of finesse, to be enjoyed within ten years.
