The incomparable geological and geographical conditions in the Penone hamlet at 600 meters above sea level are the reason and prerequisite for producing an unmistakable top quality sparkling wine with a marked regional character. With the 2014 vintage, the first 600 was vinified. The Chardonnay grapes, carefully chosen, come exclusively from ancient vines. After fermentation in the bottle, the sparkling wine matures for 55 months on the yeasts. In the glass it presents a fine and persistent perlage. Fruity nuances of white peach and yellow tropical fruit, a little quince, spiced bread and brioche. Creamy yet firm texture, mineral and saline in the aftertaste.
