Accompaniments: Ideal with traditional dishes from Alto Monferrato such as ravioli with meat sauce, mushroom risotto, game, roasts and mature cheeses.
Serving temperature: 16°-18° C
Winemaking: All the grapes are picked by hands and the 30% of all quantity fermented with whole bunch to give structure and longevity.
Temperature of fermentation 26°C and maceration about 16-20 days.
Maturation: Malolactic fermentation in stainless steel with subsequent aging of 12 months in French oak barrels of second and third passage.
